Eggplant and leek omelette

Delicious aubergine and leek omelette. I am a lover of tortillas, I love them. They can be prepared so varied, that surely one could be made for each day of the month or more. With vegetables, meat, sausages, mushrooms, fish…. with everything we want it is very good !!!

The good thing about tortillas is that we can also prepare them for use, they are ideal for weight loss, light and healthy diets.

The eggplant and leek omelette is very juicy And very good. It is even just as good from one day to the next, as a sandwich it is delicious, ideal to take to work.

Ingredients
  • 1 eggplant
  • 1 leek
  • 4 eggs
  • Pepper
  • Oil and salt

Preparation
  1. We will start the omelette by peeling the eggplant, it can be washed and leave some of the skin, we cut it into small cubes.
  2. We wash, remove the hardest part and cut the leek into small pieces.
  3. Put a frying pan with oil, add the dice and the leek cut into pieces, add a little salt and pepper and let everything simmer over medium heat.
  4. When we see that the aubergine is cooked and the leek, we take it out of the pan and put it on a plate where we will have put kitchen paper so that it takes part of the oil. We booked.
  5. We put the eggs in a bowl, beat them, add a little salt and pepper, add the aubergine and the leek. We mix everything well.
  6. In the same pan where we have poached the vegetables, add a little oil, put it over medium heat and add all the mixture.
  7. We curdle the tortilla on both sides. It must be juicy.
  8. When it is, we take out, we serve.
  9. And it will be ready to eat !!!
