Eggplant and bacon rolls stuffed with mushrooms
All the Eggplants they are an exquisite and very versatile food. In addition, they contain a low fat content, which is why they become one of the great vegetables to be able to keep the line in the diets in the slimming diets. Being quick to make, they can be made for special occasions.
Therefore, today we propose a great recipe for valentine, in which you are sure to succeed. Some roasted aubergines stuffed with smoked bacon and a scrambled eggs with mushrooms and onion. A great dish that is fine and quick to make, according to the day of love.
Ingredients
- 2 large aubergines.
- 1/2 can of mushrooms.
- 1/2 small onion.
- Bacon slices.
- Olive oil.
- Bechamel.
- Grated cheese.
Preparation
First, we will cut the 1 cm thick sliced aubergines. We will roast these on a griddle or wide frying pan, with a little olive oil and covering them. We will let them cook on both sides until they are soft.
Meanwhile, we will do the filling. We will chop the onion very finely and, in addition, we will cut the mushrooms into small cubes. In a frying pan, we will brown the onion and add the mushrooms, we will sauté a little and we will reserve.
When all the aubergines are roasted, in the same pan, we will make the bacon. We will add a few drops of oil and we will make them round and round.
When all is done, we will do the rolls. We will put a slice of eggplant, on top of it a bacon and a little of the onion sautéed with the mushrooms, roll them up and place them in a deep dish.
Finally, we will make a bechamel somewhat thick, we will napare the rolls and add a little grated cheese. We will put in the oven for a few minutes until they are gratin.
