Preparation
  1. To prepare the aubergines with chickpea flour, we first wash the aubergines well under the tap, cut the aubergine into slices and put them on a plate or drainer with a little salt. This is to release the water that makes it bitter. We leave them for about 30 minutes, when this time has passed we dry them with kitchen paper.
  2. In two plates we divide the chickpea flour in one and in another we beat the eggs.
  3. We put a frying pan with plenty of oil over medium heat. While we pass the slices through the egg and then through the flour.
  4. When the oil is hot, we will fry the slices of aubergines.
  5. Once they are golden on both sides, we take them out and we will put them on a plate where we will have kitchen paper.
  6. When they are all serve them hot.
