Preparation
  1. To prepare the sanfaina, we first wash the vegetables, cut the onion, green pepper and red pepper into pieces.
  2. We put a frying pan with a good jet of oil and add the chopped vegetables. We let them fry.
  3. On the other hand, we chop the zucchini and the aubergine.
  4. When the vegetables are a little transparent we will add the zucchini and the eggplant. We put a little salt and let it cook for 5 minutes.
  5. We let it cook everything together. If necessary we will add a little more oil. While we are peeling the tomatoes, we chop them, we add it together with the vegetables. We remove everything.
  6. Then we add the fried tomato. We let it cook for about 10 minutes.
  7. When we see that the vegetables are browning, we taste the salt, we rectify.
