Easy rice

First of all I take the opportunity to introduce myself to all of you. My name is Irene ArcasSome of you will know me through the blog Thermorecetas, of which I am the coordinator and editor. From today I join this project to share all those good recipes They are not from Thermomix, but they are equally delicious and that we have made all our lives.

We already have in this blog a great recipe for rice with vegetables, but today I present you a super easy rice, which was one of the first recipes that I learned to make. It is a rice that will never pass us because we are going to use the Brilliant brand rice, it is perfect for those who have not yet mastered the rice point, and that we are going to accompany with some frozen vegetables delicious and some chicken nuggets that will give it a great flavor. Shall we get to work?

Ingredients (4p)

  • 200 gr shiny rice (the one that does not pass)
  • 6 pieces of chicken or rabbit pieces
  • 200 grams of frozen vegetables (mine had onion, carrot, aubergines, beans, mushrooms, etc.)
  • 1 chicken bouillon cube
  • 20 prawns
  • A few threads of saffron
  • A pinch of yellow food coloring or turmeric.
  • Olive oil
  • Water

Preparation:

In a large, deep pot add a good stock of olive oil. When hot, brown the chicken / rabbit and then add the frozen vegetables. Cook everything over low-medium heat for 5 minutes. Add the food coloring.

Add the rice and brown it for 1 minute. Add 2 and a half parts of water. Stir well so that nothing sticks to the bottom, add the stock cube, cut into pieces and leave it over low-medium heat for 20-25 minutes half covered. When there are 5 minutes to go add the prawns and the saffron threads. If you want at the end you can give it a strong fire so that it browns underneath. When the cooking time is over, leave it covered 5 minutes to rest.

You can add a splash of lemon.

Comments: This rice is perfect to leave it prepared a long time before. It is also delicious from one day to the next and can be perfectly heated in the microwave without spoiling its texture and flavor.
