Ingredients
  • 2 eggplants
  • 500 grams mixed minced meat
  • ½ onion
  • 150 gr. fried tomato
  • 150 grams grated cheese, parmesan, gruyere, cheddar..
  • 100 ml. white wine
  • Olive oil

Preparation
  1. To make the stuffed aubergines without bechamel sauce, we will start by setting the oven to 200ºC with heat up and down.
  2. Cut the aubergines in half, put them in a baking dish and roast them for about 30-40 minutes.
  3. We remove from the oven, with a spoon we remove the meat from the eggplant being careful not to break the eggplant. We booked.
  4. Chop the onion, put a pan with a splash of oil, poach the onion. Add the minced meat and brown it, add the salt and pepper.
  5. When the meat is golden, add the fried tomato, mix well, add the finely chopped eggplant meat to the pan so that it mixes with the minced meat.
  6. Add the fried tomato and the white wine, let it cook all together for about 5-10 minutes. Taste for salt and pepper, adjust if necessary. We turn off.
  7. Put the empty aubergines on a baking sheet, fill the aubergines with the filling that we have prepared, cover each aubergine well with grated cheese and put it in the oven.
  8. We will have the oven at 200 º C with the gratin, leave until the top is golden.
  9. When it is, we take out and serve.
