Ingredients
  • 250 ml. whipping cream
  • 200 gr. condensed milk
  • 3 tablespoons of water
  • 1 sachet of gelatin (6 grams)
  • 1 tablespoon honey
  • 80 grams of ground pistachios
  • 30 grams roasted pistachios
Preparation
  1. We start the pistachio ice cream by putting the ingredients in a mixing glass. We will put the 80 gr. of pistachios, cream, honey and condensed milk. We crush it, we can leave it well crushed or let it show the pieces.
  2. In a bowl we will put the tablespoons of water with the gelatin for about 5 minutes. Then we put it in the microwave for a few seconds so that it is liquid. We add it to the mixture, stir or grind everything again to mix.
  3. When we have everything integrated, at this moment you can put pieces of toasted pistachios, chocolate.... I did not put anything. We put in a mold that can go in the freezer, if it is metal better, I put the pistachio cream in glass, cover with a lid or with plastic wrap and put in the freezer.
  4. After an hour we take it out, remove all the cream, smooth and put it back in the freezer, this can be done again after another hour, it is so that it remains creamy and does not form crystals. And we already left it about 8-10 hours in the freezer.
  5. When we are going to consume it, we will take it out about 10 minutes before and serve. It can be put in cups, in a biscuit, in cones... We will accompany it with chopped pistachios.
