Chicken, romanesco and cashew stir fry

- 1 romance
- 2 tablespoons of extra virgin olive oil
- 1 cebolla
- 1 green pepper
- ½ red pepper
- ½ chicken breast, diced
- A handful of peanuts
- ⅓ teaspoon turmeric
- ⅓ teaspoon black pepper
- A splash of soy sauce
- We separate the romanesco into twigs and cook them in plenty of salted water for 4 minutes. Then we drain and reserve.
- While the romanesco cooks we chop the onion and the peppers roughly.
- Heat the extra virgin olive oil in a large frying pan and sauté the onion and peppers for 5 minutes.
- Then we incorporate the chicken and sauté over medium-high heat until golden brown.
- We add the cooked romanesco and we sauté a couple of minutes more so that it takes heat.
- Then we add the spices and the soy sauce and stir while we cook the whole for two more minutes.
- In the last moment we incorporate the peanuts and we serve the chicken and romanesco stir fry with peanuts.
