These pumpkin and cocoa muffins are ideal to give yourself a sweet treat. They are whole grain and do not have added sugar.

Ingredients
  • 50g. pitted dates
  • 50g. dried figs
  • 245g. roasted pumpkin
  • 4 eggs
  • 35g. pure cocoa
  • 70g. oatmeal
  • 70g. extra virgin olive oil
  • 16g. chemical yeast
  • 12 drops of dark chocolate
Preparation
  1. We put dates and figs to soak in hot water before starting to prepare the recipe. After 10 minutes, we drain.
  2. We preheat the oven to 180ºC and we prepare the muffin molds, inserting paper capsules into the holes of the metal mold.
  3. In a bowl we crush all the ingredients, with the exception of the chocolate drops, until a homogeneous mass is obtained.
  4. Once the mass is obtained, we fill the capsules up to ¾ of its capacity.
  5. To finish we sink a drop of chocolate in each one of them.
  6. We take to the oven for 20 minutes or until the knife comes out clean. Then, we turn off the oven and let it warm for 10 minutes in the oven with the door open.
  7. Then, we take out the paper capsules and place them on a rack to finish cooling.
