This rice with pepper and zucchini is very easy to prepare and can be served both as a main dish and as an accompaniment to meat or fish.

Ingredients
  • 1 cup of rice

  • 1 chopped onion
  • 1 red bell pepper, minced
  • 1 small zucchini, diced
  • Some roasted peppers in strips
  • 1 teaspoon tomato

Preparation
  1. We put cook the rice in plenty of salted water in a saucepan for the time recommended by the manufacturer. Afterwards, we cool under cold water and drain. We booked.
  2. Meanwhile, in a large frying pan, heat a drizzle of olive oil. When it's hot sauté the onion with the pepper for 10 minutes.
  3. Then add the zucchini and fry at medium temperature until tender.
  4. Then, add the roasted peppers and the tomato and mix.
  5. We incorporate the rice that we have reserved and we flatten it slightly to compact it. Cook over medium high heat for 4 minutes and then stir it to repeat the same operation. The idea is that some grains take on a crunchier texture.
