Couscous with onion, zucchini and edamames

Today we prepare a recipe with edamames, the snack that has revolutionized the networks.

Ingredients
  • 1 red onion, julienned
  • ½ white onion, julienned
  • 1 green bell pepper, minced
  • ½ red bell pepper, chopped
  • ½ zucchini, peeled and diced
  • 5 dates chopped
  • A handful of raisins
  • 200 g. frozen edamames
  • 1 cup of couscous
  • ½ avocado, diced
  • Sal Island
  • Black pepper
  • Dried parsley
  • Extra virgin olive oil
Preparation
  1. Poach the onion with a drizzle of oil in a large skillet.
  2. When the onion is tender, add the peppers and cook four more minutes. Add the zucchini and continue cooking over medium heat until tender.
  3. Then, we incorporate the dates and the raisins. Mix and cook a couple more minutes.
  4. At the same time we cook the edamames following the manufacturer's instructions. In this case, cook them in plenty of salty water for 3 to 5 minutes, once the water boils again. After time, we drain them, shelve them and add them to the pan.
  5. Now let's cook the couscous following the manufacturer's instructions. Once done, add a few drops of oil, a little parsley and black pepper and loosen the grains with a fork.
  6. We serve the couscous in a bowl and place the vegetables and avocado on top.
