Ingredients
  • 6 eggs
  • 3 potatoes
  • 1 small or medium onion
  • 2 zucchini
  • A splash of milk
  • Oil and salt.
Preparation
  1. To make the onion, zucchini and potato omelette, we will first peel the onion and chop it into very small pieces.
  2. Peel the potatoes and zucchini and cut into thin slices,
  3. In a frying pan we put a good jet of oil. In a bowl we put everything cut we add salt, we stir it and we put everything in the pan.
  4. We leave it cooking over medium heat until everything is well poached.
  5. We will be stirring it so that it takes a little toasted color and is well done.
  6. When it is, we put it in a drainer to release all the oil.
  7. In a bowl, beat the eggs, put a splash of milk and a little salt, add all the ingredients, mix well.
  8. We put the pan that we have to make the omelette with a little oil, add all the mixture and let it set over a low heat.
  9. When we see that it is curdling around it, we turn it over and leave it until it is to our liking. It is better to leave it juicy, if we do it a lot it can be very dry inside.
  10. And it will be ready. It is just as good cold as hot.
