Zucchini and Edam Cheese Omelette

- 2 eggs
- ½ diced zucchini
- 3 slices of Edam cheese
- Freshly ground black pepper
- Sal Island
- Extra virgin olive oil
- 2 slices of raisin bread (optional)
- We put in a pan to heat a teaspoon of olive oil and we sauté the zucchini a few minutes until tender.
- We beat the eggs in a bowl, season and add them to the pan.
- Add one of the cheese slices and stir the whole for a few seconds with a wooden spoon. Then, we let the tortilla set.
- Before taking it out, on the last lap, we incorporate the cheese.
- We serve the omelette on a toast of bread.
