This Edam Cheese Zucchini Omelette is a fantastic main dish for an impromptu dinner. Simple and quick to prepare.

Ingredients
  • 2 eggs
  • ½ diced zucchini
  • 3 slices of Edam cheese
  • Freshly ground black pepper
  • Sal Island
  • Extra virgin olive oil
  • 2 slices of raisin bread (optional)
Preparation
  1. We put in a pan to heat a teaspoon of olive oil and we sauté the zucchini a few minutes until tender.
  2. We beat the eggs in a bowl, season and add them to the pan.
  3. Add one of the cheese slices and stir the whole for a few seconds with a wooden spoon. Then, we let the tortilla set.
  4. Before taking it out, on the last lap, we incorporate the cheese.
  5. We serve the omelette on a toast of bread.
