Ingredients
  • 350 gr. of rice
  • 2 chicken breasts
  • 1 small onion
  • ½ green pepper
  • ½ red pepper
  • 1 garlic clove
  • A handful of green beans
  • 2 tomates
  • Chicken or vegetable broth
  • Saffron
  • Salt and oil
Preparation
  1. We clean the vegetables, we chop the very small onion, the garlic and the peppers, we cut them into pieces or strips, the green beans we cut them into small pieces, the tomatoes we chop removing the skin and we cut them into very small pieces.
  2. We put a saucepan on the fire with a little oil when it is hot we add the cut vegetables minus the chopped tomatoes.
  3. We cut the chicken breasts into very small pieces, when the vegetables have browned a little, add the tomato, leave it with the vegetables for a couple of minutes and add the chicken, put a little salt, let it cook all together for a few minutes.
  4. Add the broth, it will be double the broth for the amount of rice, add a little saffron to the broth and leave until it starts to boil.
  5. When it starts to boil, lower the heat and cook over medium heat for 15-18 minutes, depending on the rice.
  6. When it is turned off, we let it rest for about 5 minutes and we only have to serve and enjoy a delicious chicken and vegetable rice.
