Ingredients
  • 3 salmon fillets
  • Sal Island
  • Freshly ground pepper
  • Extra virgin olive oil
  • 1 spoonful of butter
For the dressing
  • ¼ cup walnuts, lightly toasted
  • 1 small garlic clove, crushed
  • ⅛ cup of grated cheese
  • ¼ cup chives, finely chopped
  • ⅓ cup of extra virgin olive oil
  • ⅛ teaspoon of salt
Preparation
  1. Using a food processor, we crush the walnuts.
  2. Then add the cheese and garlic and blend again.
  3. In a bowl, mix the previous pasta with the chives and olive oil. Season and reserve.
  4. We heat the oven to 200ºC.
  5. We dry the loins salmon with absorbent paper and salt and pepper
  6. In an iron pan, add a few drops of oil and when it starts to smoke, place the salmon fillets skin down. Press the tenderloins a little with the spatula to get a crispy skin. Then reduce the heat and cook 3-4 minutes.
  7. We turn the loins, place a little (very little) of butter on each of them and we take the pan to the oven.
  8. Cook in the oven for 3-4 minutes, until the salmon is done, and then we remove it.
  9. We serve with the prepared dressing.
