Sirloin stuffed with ham and cheese

Ingredients
  • 2 pork tenderloins
  • 150 gr. bacon
  • 150 salted ham
  • 150 sheep's cheese or slices
  • ½ onion
  • 150 ml. white wine
  • 300 ml. cream for cooking
  • 1 can of mushrooms

Preparation
  1. First we will clean the sirloins, remove all the fat, open the sirloins in half.
  2. Once the sirloin is open, we put a little salt and pepper all over it, fill it with ham and cheese, close it with toothpicks or string, as you like.
  3. We will put a saucepan to heat with oil. We will add a little pepper to the sirloins and brown them little by little, turning them.
  4. When they are golden brown we will add the chopped onion and leave it over medium heat until it is golden brown and we will turn the sirloins so that they are done.
  5. When the onion is golden, we will add the glass of white wine.
  6. Let it cook for 5 minutes, until the alcohol evaporates. We will add the liquid cream.
  7. We will have it over medium-low heat, cooking about 15 minutes, if we see that it is very thick we can add a little milk. We will taste it with salt if necessary.
  8. While we will prepare another pan to fry the filleted mushrooms, to accompany the sirloin.
  9. When the sirloins are ready, we will let them cool to cut them, out of the sauce.
  10. We will cut them into slices and serve them accompanied by the sauce and mushrooms.
