  • 200 ricotta cheese or cottage cheese

Preparation
  1. We prepare the crepes, put all the ingredients except the butter in a bowl and beat it well until there is a dough without lumps, it should not be too thick. We let it rest for about 20 minutes.
  2. We heat a pan of the size we want the crepes, put over medium heat and spread it with a little butter, add a little of the dough and distribute it over the entire base of the pan, let it brown a little and with With the help of a spatula we turn it over and finish it.
  3. We repeat the operation with each one, until all the dough is finished.
  4. We prepare the filling.
  5. In a pan we put a little butter when it is hot we will put the chopped spinach, sauté them and add the cheese, all chopped, stir it all together until everything is incorporated, add a few tablespoons of liquid cream, salt and pepper, let it cook for a few minutes .
  6. When we see that everything is like a cream, we taste salt.
  7. We fill the crepes with this spinach and cheese cream and we place them in a source, and bake them for 10 minutes at 200ºC, remove and serve hot.
