Ingredients
  • A chicken
  • 2 or 3 prawns or prawns per person
  • A medium onion
  • 6 tablespoons of tomato puree
  • A glass of cognac
  • 2 glasses of fish broth
  • Oil and salt
  • For the bite:
  • 1-2 slices of bread from the day before
  • A few toasted almonds (12 almonds)
  • Some pine nuts
  • 2 garlic
Preparation
  1. First we clean the chicken and cut it into pieces, add a little salt and pepper.
  2. In a casserole with a little oil we brown the chicken and reserve, in that same oil we brown the prawns, we reserve.
  3. We put a little more oil if necessary and we put all the ingredients of the bite, we brown it a little, we remove and we put it in a mortar and we crush it.
  4. In the same casserole we put the onion to poach when it takes a little color we will put the crushed tomato and let it cook.
  5. When we see that the tomato is already there, we put the chicken and add the glass of brandy, when the alcohol evaporates, we put the fish broth and the minced meat and we let it cook for about 40 minutes, we taste the salt and see that the chicken is tender we do not leave it a while.
  6. We put the prawns on top and leave it for a couple of minutes, we turn off the heat.
  7. And serve.
  8. If we prepare it from one day to the next, the sauce is much better and the chicken takes on much more flavor.
