Baked sea bass on a bed of baked potatoes and onion is a light alternative to complete our menu at Christmas.

Ingredients
  • 1 clean sea bass
  • 3 potatoes
  • 1 cebolla
  • 3-4 lemon slices
  • 3 cloves of garlic
  • Chopped parsley
  • 1 sprig of rosemary
  • Olive oil
  • Sal Island
Preparation
  1. We peel and we cut the potatoes in slices of little more than half a centimeter.
  2. We cut the onion in julienne.
  3. In a large frying pan with plenty of oil, we cook the potatoes over medium-low heat for 5-10 minutes.
  4. Then we incorporate the onion, season and cook 10 more minutes.
  5. Meanwhile, we do some diagonal cuts in the sea bass and insert some lemon slices into them.
  6. We place the potatoes and onion in a baking dish, big enough to fit the sea bass.
  7. We put the sea bass on top, seasoned and smeared with a bit of oil.
  8. We incorporate some crushed garlic cloves, chopped parsley and a sprig of rosemary to the source.
  9. Bake for 20 minutes at 190ºC in the oven (previously preheated).
  10. We serve hot
