Tuna empanada, a delicious recipe to take advantage of vegetables

This recipe for tuna pie It is designed for those days that we do not know what to do for lunch or dinner, and we also want to take advantage of the food that we have.

Well, here are the ingredients and preparation so that you can do it yourself. You will tell me, for my part, I tell you that you will succeed.

Ingredients

For the mass:

  • 300 g of flour.
  • 1 envelope of cornstarch baker's yeast.
  • 100 ml of oil.
  • 100 ml of water
  • Pinch of salt.
  • Yolk.

For the filling:

  • 2 fat onions.
  • 1 large green bell pepper.
  • 3 medium tomatoes.
  • 2 cans of tuna.
  • Fried tomato squirt.
  • Salt

Preparation

Beforehand we have to make the dough of this tuna pie, since it must rest. So, in a bowl, we put the flour, yeast and warm water. We will knead everything well until we see that the water has absorbed all the flour.

Then, we will incorporate the oil and salt. We will mix and knead everything until we get one fine compact paste. We will do this for about 15-20 minutes. When the dough is, we will let it rest wrapped in a damp cloth for half an hour.

While it is at rest, we will perform the filling. First, we will chop all the ingredients into very small cubes. We will put these in a pan over the fire along with a good background of olive oil. We will cook it for a few minutes until all the vegetables are poached. Lastly, add the tuna and the drizzle of fried tomato, stir a little and let it warm.

After the waiting time for the , we will stretch it with a roller, and we will divide it into two more or less equal halves. We will arrange one of the halves on a baking sheet (place baking paper on its base), we will fill with the mixture that we have made before. Try not to reach the edges.

Finally, place the other half on top and seal the edges by squeezing them a little with your fingers. Paint with the egg yolk and put the oven for about 30 min at 180ºC. I hope you enjoy it.
