This is a common sponge cake at home. With a cup of coffee or hot chocolate at mid-afternoon this cornstarch cake It is an absolute delight. The cornstarch cake is a basic cake, such as lemon yogurt, to which we can add different aromas and ingredients. It is easy to make; the food processor and oven do most of the work. - 250 g. butter at room temperature
- 250 g. of sugar
- 3 XL eggs
- 150 g. cornstarch
- 150 g. pastry flour
- 3 level teaspoons baking powder
- 60 ml. milk
- 1 pinch of salt
- Half a chocolate bar 70% melted (to decorate)
We preheat the oven to 190º.
We beat the butter at room temperature adding the sugar little by little until obtaining a whitish and fluffy mixture.
We add the yolks one by one and we keep beating.
We mix the sifted flour, cornstarch and yeast. Add little by little to the butter mixture, beating at low speed and alternating with the milk.
In a separate container we assemble the clear to the point of snow with a pinch of salt. We add them to the cake batter and incorporate with enveloping movements using a pastry tongue.
We grease a 20 cm mold. and line the base with greaseproof paper. We pour the dough and we smooth the surface with a spatula. We hit the mold on the worktop 3 or 4 times so that the dough settles.
We put in the oven preheated to 190 degrees and we bake for 45-60 min. The times are approximate and depend on each oven. The cake will be ready when, when you click the center of the cake with a stick, we see that it comes out clean.
