Jokes aside, today's recipe is ideal for winter, since it brings that heat typical of a good stew and a good soup, but without going over the calories. It is a defatted broth, which in my case I have chosen to add some colored pasta stars. You can add whatever you want: thin noodles, thick noodles, normal stars, letters, etc.
Then I leave you with the recipe for my particular defatted broth.
- 1 whole chicken breast
- 1 spine bone
- Carrots 2
- ½ onion
- 1 leek
- 1 turnip
- shawl
- Water
- The first thing to do is take a pressure cooker and add water to it (in my case I fill it whole, leaving 4 fingers without water to the edge of the pot).
- The next thing will be to wash all the ingredients, both the chicken breast as vegetables that we are going to incorporate him. In my case I have chosen 2 carrots, ½ onion, 1 leek and 1 turnip.
- Except for the onion, which I will add in a single half. I will cut the rest of the vegetables into 2 pieces, so that it becomes soft but without falling apart.
- We add the salt that we believe appropriate (it is better to fall short in this ingredient than to go overboard).
- We put our maximum fire pressure cooker for 10 minutes approximately. If it is a normal pot it would take between 45 and 50 minutes.
- Once we have made our broth, the last step will be to remove all the ingredients on a plate (we will add a little of each ingredient to each person, according to their tastes). With a mixer, we will beat our broth, to obtain a homogeneous texture and with a quite appetizing appearance.
- Now, as you feel like it, you can serve yourself the broth alone or add some pasta to it to boil and turn it into a delicious soup.
