Rice With Chicken Curry

Rice in Spain is usually a good dish to enjoy a Sunday in family. The most common is to prepare a paella (especially in summer) but we also have simpler and equally rich versions such as the classic chicken rice, which is always successful and children love it.

My version of chicken rice It has a slightly more exotic air because I add a little curry, which gives it a different and delicious touch. I always remember that my closest friends from school asked about that famous curry chicken rice when I invited them to eat at home, and they always repeated! Today I share the recipe with you and I hope you enjoy it as much as I do.

Ingredients

  • 200 gr of rice
  • Half green bell pepper
  • Half red pepper
  • Half yellow bell pepper
  • 1 cebolla
  • 2 ripe tomatoes
  • 2 cloves of garlic
  • 3 tablespoons olive oil
  • 2 chicken fillets
  • Sal Island
  • Pepper
  • Half a teaspoon of turmeric
  • 1 teaspoon of curry

Crafting

In a large frying pan we are going to heat the olive oil and add the finely cut onion, the sliced ​​garlic and the diced peppers. When the onion is transparent we will add the chicken fillets cut into cubes, we will give it a few turns so that they take on color and add the diced tomatoes.

We are going to cook everything until the tomato falls apart, you must stir frequently to prevent the onion from burning. Gradually crush the tomatoes with the help of a wooden spoon, when you have it ready add water, salt, pepper, turmeric and curry. Mix well and keep it over low heat, when it boils add the rice and let it cook until the rice is ready and the sauce has reduced to taste.

Notes

  • If you wish, you can leave it soupy, but remember to serve at the moment.
  • You can use food coloring instead of turmeric.
