Curried vegetable dumplings, delicious and easy to prepare. If you have some vegetables in the fridge so that they don't spoil, we just have to fry them and accompany them with what you like and give them a touch. In this case, I have added a touch of curry, it gives a lot of flavor and the vegetables are very good.

Ingredients
- 1 packet of dumplings wafers
- 1 green pepper
- 1 red pepper
- 2 Zucchini
- 1 cebolla
- Fried tomato to taste
- 1 teaspoon curry to taste

Preparation
- To prepare these curried vegetable patties, we will start by cleaning all the vegetables.
- Chop the green pepper into small pieces.
- We chop the red pepper into small pieces.
- We wash the zucchini, cut them into squares with the skin if they are good. (can be peeled).
- Peel and chop the onion into small pieces.
- Once we have all the vegetables, we will put a casserole with a jet of olive oil over medium heat, we add the onion, we leave it for 3-4 minutes to poach a little.
- Then we add the green and red peppers. Sauté other minutes all together.
- Add the zucchini, add a little salt and pepper and let it cook until everything is well poached. We will be stirring so that it does not stick, you can add more oil or a little water to continue cooking.
- Once everything is poached, add the curry, stir until everything is well mixed. Add the fried tomato, the amount to our liking, let it mix for a few minutes and turn off. Let it cold down.
- We turn on the oven at 180ºC. We fill the dumplings with this vegetable filling, close them, put them on a tray and put them in the oven until they are golden brown.
- When they are we take out and serve.
