The recipe for this cucumber salad and feta cheese I have stored it since the summer. It would have been more logical to publish it then but it is never too late! Today we can find cucumbers all year round in the supermarket, so there are no excuses not to include it on our menu.
Cucumber and cheese make a good tandem. Feta cheese I think it is a great choice to complete this recipe, but you could substitute it for a cottage cheese or cottage cheese and the result, I am sure, would also be very good. They are the most important ingredients, without a doubt, but not the only ones in this salad, as you can see in the list.
To dress this salad, a simple dressing is enough, however, I wanted to go a little further and propose a very simple yogurt sauce perfect for this and other salads. One tablespoon is enough per person to transform the salad, but if someone does not like it, it is best to serve it separately. Do you dare to prepare it?
The recipe (for 2)
- 2 cucumbers
- 1 chive
- 1 red pepper
- 75 g. canned corn.
- 80 g. crumbled feta cheese
- Fresh parsley
- 1 natural yogurt
- 1 garlic clove
- A tablespoon of extra virgin olive oil
- Salt and freshly ground pepper to taste.
- We cut the cucumber into cubes and we chop the chives and the pepper.
- We mix them with the rest of the ingredients of the salad in a bowl and set aside.
- In a cup or small bowl we prepare the dressing mixing the yogurt with the minced garlic, a tablespoon of olive oil, salt and pepper to taste.
- We serve the cucumber salad with the yogurt dressing.
