Crispy chicken medallions with kikos

On certain occasions we make fillets or breaded chicken breasts with just egg and breadcrumbs. However, today we give you a trick so that those fillets and breasts are much more crispy and have a different flavor, becoming a great snack.

In just half an hour you will have a tapa, montadito or a hot starter for those days when you don't feel like having dinner or eating so much. Or, for when friends arrive and we want to surprise them with something different.

Ingredients

  • 2 chicken breasts.
  • 2 eggs.
  • 1 small packet of kikos.
  • Some breadcrumbs.
  • Sunflower oil.

Preparation

First of all, we will have to mash the kikos. To do this, we will use either the thermomix or the mincer, but if you do not have these devices, help you with the mortar of a lifetime. It should be a fine powder, although some chunks do not matter that they are very large.

Then we will cut the chicken breast into medallions or thick slices. In this case, you must remove the small sirloin that the chicken brings and reserve it for another recipe or also to coat it in this way.

Then, we will beat the eggs and mix the kikos crushed with a little breadcrumbs. We are submerging each chicken medallion on the egg and then by the kikos and we leave aside.

Finally, we will fry all the medallions in plenty of sunflower or olive oil. In addition, you can accompany it with a sauce.
