Cream coca

Cream cake, a rich soft and very juicy sponge cake. The dough is very juicy and tender. These cocas are prepared for the festivities of San Juan, the bakeries are filled with cocas. They are prepared with pine nuts, cream, chocolate, fruits and pork rinds, they are a delight.

Coca is very simple to prepare, you just have to have time and patience to prepare the dough. But it was worth it, it is very good and it is not that complicated.

Ingredients
  • 500 gr. strength flour
  • 10 gr sal
  • 100 gr. sugar
  • 3 eggs
  • 100 gr. of butter
  • 190 gr. of water
  • 35 gr. Fresh Yeast
  • Lemon zest
  • ½ teaspoon ground cinnamon (optional)
  • Pinions
  • Grain sugar
  • For the cream:
  • 1 liter of milk
  • 250 gr. sugar
  • 6 yolks
  • 80 gr. starch or cornstarch
  • A teaspoon of vanilla

Preparation
  1. In a container all the ingredients, except the butter and yeast and knead, by hand or with a mixer if you have one. We will leave the butter in the fridge.
  2. We will knead, after 5 minutes we will add the butter and we will continue kneading it until it is well incorporated, when the dough is almost we will add the chopped yeast with a little water to dissolve it better and we will mix well.
  3. The dough must be thin and elastic. I finished kneading it by hand and had to add a little more flour, until the dough no longer sticks in my hands, or it detaches from the bowl.
  4. We will leave the dough resting in a bowl greased with a little oil.
  5. We cover it with a cloth and let it rest at room temperature, 1 hour and 30 minutes, or until it doubles in volume.
  6. Divide the dough into 2-3 portions, shape the dough into a ball and let it rest in the fridge covered with a cloth for about 30 minutes. After this time, we take it out and shape it, leaving it one centimeter thick.
  7. We line a baking tray with baking paper and place on top. We paint the coca with lightly beaten egg.
  8. We cover it with a cloth and let it ferment again, until it has doubled its volume.
  9. We turn on the oven at 180º. We prepare the cream.
  10. We boil 750ml. of milk with the teaspoon of vanilla and sugar. If you don't like the vanilla flavor, you can put a cinnamon stick and a piece of lemon peel. We will not stop stirring.
  11. With the rest of the milk, mix the egg yolks and the starch, stir with a whisk until no lumps remain.
  12. When the milk begins to boil, we will add the mixture of the yolks, we stir, when it begins to boil we leave it one more minute that it will have already thickened and we will remove it from the heat.
  13. Let cool and fill a pastry bag with the cream.
  14. We put the cream on top of the dough in crossed strips.
  15. Sprinkle with sugar and pine nuts and put it in the oven for about 14-15 minutes, it is done right away, you have to watch so that it does not burn.
  16. After this time it will be ready. Take out and let cool.
  17. And ready to eat !!!
