Couscous with onion, zucchini and edamames

The 'realfooder' movement has made edamames fashionable. A year ago many of us did not know of the existence of these soy pods popular in Asia and now we sell it out in large stores such as Mercadona or Carrefur. What do edamames have to have convinced us to such an extent?

The culinary possibilities it offers us and its ease of cooking have a lot to do with its success. Just boil it for a few minutes to achieve a healthy snack with which to satisfy ourselves between hours. It can also be served as an accompaniment to numerous dishes such as couscous with onion, zucchini and edamames that we propose today.

Rich in vegetable proteins, carbohydrates, micronutrients such as calcium, iron, phosphorus, sodium, manganese, and dietary fiber, edamames are a healthy option. Fiber is precisely what gives us that feeling of satiety that makes them suitable as a snack, in addition to promoting good digestion, improving intestinal transit and preventing diseases such as diverticulosis. Another characteristic to take into account is that edamames have a low calorie content and a zero fat content being a good option for weight loss diets.

Ingredients
  • 1 red onion, julienned
  • ½ white onion, julienned
  • 1 green bell pepper, minced
  • ½ red bell pepper, chopped
  • ½ zucchini, peeled and diced
  • 5 dates chopped
  • A handful of raisins
  • 200 g. frozen edamames
  • 1 cup of couscous
  • ½ avocado, diced
  • Sal Island
  • Black pepper
  • Dried parsley
  • Extra virgin olive oil

Preparation
  1. Poach the onion with a drizzle of oil in a large skillet.
  2. When the onion is tender, add the peppers and cook four more minutes. Add the zucchini and continue cooking over medium heat until tender.
  3. Then, we incorporate the dates and the raisins. Mix and cook a couple more minutes.
  4. At the same time we cook the edamames following the manufacturer's instructions. In this case, cook them in plenty of salty water for 3 to 5 minutes, once the water boils again. After time, we drain them, shelve them and add them to the pan.
  5. Now let's cook the couscous following the manufacturer's instructions. Once done, add a few drops of oil, a little parsley and black pepper and loosen the grains with a fork.
  6. We serve the couscous in a bowl and place the vegetables and avocado on top.
