Coriander pesto

We are very fans of pesto, both the classic basil, and those that emerge after experimentation. This recipe is perfect for lovers of coriander, its flavor and perfume is unmistakable. Perhaps to some this pesto can be very strong, and the truth is. If you do not dare at the moment, you can simply substitute the coriander for basil and thus enjoy a classic and rich pesto, perfect to accompany an authentic Italian pasta 😉 Although the original recipe uses pine nuts, almonds ... are cheaper!

At home we use it to season, we love it in a chicken wok with vegetables, it is really delicious. Although it can also be perfect to dress a salad, pasta or why not, to season the meat of a BBQ. To make the vegetable and chicken wok we just have to previously make the vegetables in the wok together with soy sauce, remove. Add two tablespoons of this fantastic coriander pesto to the wok, once with the wok at high temperature, add the chicken in strips and brown. Once it's cooked it's time to eat!

Ingredients
  • 1 bunch of coriander
  • 1 handful of almonds
  • 2 cloves of garlic
  • 60/80 ml of olive oil
  • juice of ½ lemon
  • pepper
  • shawl

Preparation
  1. Toast the almonds in a frying pan with a little oil, until toasted.
  2. In a mincer glass add the coriander, along with the lemon juice, the peeled almonds and season.
  3. While we chop the pesto sauce, we have to add the oil little by little, until we have a light green sauce. I like not to over-crush and find pieces of almonds, garlic ... in the sauce.
  4. And ready!
