Ingredients
For 18-20 cookies
- 100 g. creamy butter
- 90 g. brown sugar
- 45 g. normal sugar
- 1/2 teaspoon of Vanilla Essence
- 1 Egg
- Sal Island
- 220 g. pastry flour
- 7 g. chemical yeast
- 80 g. chocolate chips
Crafting
Mix the butter with the sugar with the help of a wooden spoon or spatula. Next we add the egg lightly beaten with a pinch of salt and we bind the mixture.
We incorporate the sifted flour with the baking powder and the chocolate chips and mix until forming a ball of dough.
We wrap the dough well in transparent film and take it to the fridge for 1h.
We preheat the oven to 200ºC with heat from top to bottom. We take the dough out of the fridge, we form balls the size of a plum with our hands and place them on a baking sheet with parchment paper, flattening them slightly and leaving space between them so they can grow.
We bake at 200º for about 15 minutes (the time will depend on both the oven and the size of the cookies) until they are golden brown. You will know that they are ready if they are golden and when you touch them with your finger they are still soft on the top.
We take out the cookies and leave them cool on a wire rack.
Notes
The cookies should be soft when you take them out. If we touch them with the finger at the top, it should sink slightly. It will be when the sugar cools that they will harden and they will become crispy.
To calculate the oven time, I advise you to do them in two batches the first time. Thus, you can check different times and find the right point that will be between 10 and 16 minutes.
To keep them, just keep them in a airtight can. They will hold up to 3-4 crisp days.
