Lemon mousse and cookie cake

With Christmas just around the corner, many hosts are already thinking about the Christmas dinner menu. On many occasions, the starters, the first and the second course are planned in detail, leaving aside the dessert since typical Christmas sweets are usually served. It is logical, since after so many hours of cooking, there is not much time left for an overly elaborate dessert.

To solve this, today I bring you this lemon mousse cookie cake recipe, a simple dessert that is prepared in a few minutes. In addition, it does not need an oven since it is a cake to take cold, something ideal after a copious dinner. And if you have children at home, they will surely be happy to help you prepare this delicious cake, which takes little work and is light and delicious.

Ingredients
  • Maria type cookies, a package and a half approximately
  • 5 lemons
  • 450 ml of condensed milk
  • 450 ml of evaporated milk
  • butter

Preparation
  1. First, we are going to squeeze the lemons and reserve the juice obtained.
  2. Now, we will use the blender glass to make the mousse.
  3. We put the condensed milk first, then the evaporated milk and finally the lemon juice.
  4. We beat well until obtaining a creamy mixture and we reserve.
  5. We will need a rectangular mold, the kind we usually use for the cake.
  6. Spread a little butter all over the inside of the mold with our fingers.
  7. Now, we cut some strips of vegetable paper and we place them in the mold, gluing them well with the butter.
  8. Once the mold is ready, we assemble the cake.
  9. First we place cookies on the base and on the sides of the mold.
  10. We pour a little of the mousse and distribute with a spatula.
  11. Again, we place a layer of cookies on the bottom and cover with the mousse again.
  12. We repeat the steps until the cookies on the sides are covered with mousse, and add this completely.
  13. Now, we cover with plastic wrap and put in the refrigerator for at least 3 hours.
  14. Once the cake is well set, we carefully unmold it and refrigerate again until serving time.

Notes
To serve it, you can decorate the top with some red berries
