The combined dishes They are a great ally in the kitchen to take advantage of different food leftovers that we keep in the fridge. And when these are mostly vegetables, rice or legumes they become a perfect complement to make this dish a much more complete dish. And that's how this combo dish of rice, cauliflower and roasted carrots comes to be.

roasted vegetables They are at another level compared to the cooked ones. However, we do not always have the time to prepare them in this way. That is why I have used a trick here, that of blanching the vegetables for a few minutes and then taking them to the oven.

The condiments They are very important in this dish and you can add the ones you like the most. At home we have opted for turmeric for the rice and a mixture of sweet and hot paprika for the vegetables, as well as salt and pepper, of course. Do you like combined dishes of this type?

Ingredients
  • ½ cauliflower
  • Carrots 4
  • 1 glass of rice
  • 3 glasses of water or vegetable broth
  • ½ red onion, minced
  • ½ red bell pepper, chopped
  • Extra virgin olive oil
  • 1 tablespoon tomato sauce (optional)
  • Paprika
  • Hot paprika
  • Turmeric
  • Sal Island
  • Pepper

Preparation
  1. We peel the carrots and cook them in plenty of salted water for 5 minutes.
  2. Then add the florets to the water of cauliflower and cook the whole for three more minutes once the water boils again.
  3. Then we drain the vegetables and we reserve them while we mix in a small cup three tablespoons of olive oil, paprika to taste, salt and pepper.
  4. Put the carrots and the cauliflower florets in a baking dish. we brush them with the previous mixture and take them to the oven.
  5. We bake at 200ºC for 15-20 minutes while we prepare the rice.
  6. For that, sauté the onion and the chopped pepper for 8 minutes.
  7. Then we add the rice and sauté a couple of minutes.
  8. Add the boiling broth, turmeric, fried tomato and season with salt and pepper. Cover the pan and cook for 8 minutes over medium-high heat. Then, uncover and cook for another few minutes until the rice is done.
  9. We serve the combined plate rice with cauliflower and roasted carrots.
