Cod with fried tomato

Today I bring you a very simple, fast and flavorful recipe: a cod with Hida fried tomato. A traditional dish of our gastronomy that always has good results.

To make this dish we can use the fish that we like the most, such as hake, monkfish, tuna ... And accompany it with a good fried tomato.

A dish that is prepared with few ingredients, we can prepare it in advance from one day to the next, it will be even better.

Ingredients
  • 8 pieces of desalted cod
  • 1 bottle of fried tomato Hilda
  • Olive oil
  • Flour (XNUMXg)
  • Sal Island
  • Pepper
  • Parsley

Preparation
  1. To prepare the cod with fried tomato, we first prepare the cod. We put it to desalinate for 48 hours, changing the water every 8 hours. You can buy it already desalted.
  2. We put flour in a plate or source, we salt the pieces of cod and we pass them through flour.
  3. We put a pan with plenty of oil, when it is hot we add the pieces of cod in batches, we brown them on all sides, it does not need to be cooked completely, since then it will be finished with the fried tomato.
  4. We put a plate with kitchen paper, we will put the fried pieces of cod so that they release the excess oil.
  5. Once the cod is fried in a saucepan, we put the fried tomato to heat, add the cod, cover and let it cook over low heat all together for 10 minutes so that the cod takes all the flavor of the tomato.
  6. Once we have it ready, we taste the salt, rectify, add a little pepper, chop parsley and sprinkle on top. We serve the cod covered with the fried tomato sauce in a platter.
  7. Serve piping hot accompanied by a good piece of bread.
  8. And ready to eat!!!
