We are in Lenten season and fish recipes are often very popular. And although I am not a very follower of these traditions, today I want to share a recipe to make a delicious cod with chanfaina.
The truth is that it is delicious and it costs nothing to make. As always we go shopping and we know other details to prepare our recipe today.

Ingredients for 4 people:
- 8 pieces of cod (preferably tails)
- 1 red pepper
- 1 eggplant
- 1 Tomate
- 1 jar of crushed tomato
- oil
- flour
- shawl
When we have all the ingredients we can prepare to prepare our recipe. We start cutting the diced vegetables, the pepper, the aubergine and the tomato. While on the fire we put a frying pan with oil to heat it.
With the vegetables cut into tacos, They should not be regular but if of a similar size so that they cook well, we add them to the oil that will be hot so that they poach, so we must keep the heat low so that they do not burn. When you are ready we add a baso of crushed tomato and let it simmer.
Now in another pan we put oil to fry the cod that we are going to flour. In the ingredients, comment that they were tails, if possible, because they have less thorns. When we have it fried it will be ready to mix.
We already have the poached vegetables and the golden cod. We can mix it up, be careful because the cod can break, let it soak well of the flavor of the vegetables and we have it ready.
