300g desalted cod
1 red pepper
1 green pepper
1 yellow bell pepper
Cut the cod into squares. Roast the peppers spreading them in oil and with salt. Then, Peel them and cut them into strips.
Cook the potatoes and mash them. Dress them with oil, chopped chives and salt. Cook the egg and chop it together with the onion. Mix the cod with the chopped egg and onion in a bowl, add olive oil, lemon, Tabasco and a little salt.
For the vinaigrette, mix the olive oil, the olive paste, the vinegar, the salt and the pepper.
Place, with the help of a mold, the mashed potatoes in the bottom of the plate, put the peppers on top by the colors and, finally, the cod tartar on top. Garnish with the crushed black olive paste, the olive vinaigrette.
