Today we are going to prepare a very traditional fish dish in the south of our country. In any area of Andalusia, you can find fried fish as the main dish of all menus. Especially in this summer time, there is nothing like having a delicious fry and in this case we are going to prepare it with cod. Cod is a white fish, therefore it is low in fat and perfect for any diet.
In addition, cod contains a large amount of proteins and vitamins essential for the body. So don't hesitate to include this delicacy on your weekly menu. This way of preparing it is ideal for the whole family, the children will love it. Cod frying goes perfect with a side dish of vegetables, either a green salad, a salad or as in this case a mackerel dressing.
- 1 kilo of frozen cod cut into cubes
- 2 eggs L
- Flour for frying
- Extra virgin olive oil
- 2 large tomatoes
- 1 can of canned mackerel

- We wash the cod tacos well under running cold water, drain well until all the water is removed.
- We dry the fish with absorbent paper to make sure there is no water, otherwise the oil will skip.
- We prepare a container with special flour for frying.
- In another bowl, beat the two eggs well.
- We put a small frying pan on the fire with plenty of olive oil, once it acquires enough temperature we begin to put the fish.
- For the frying to be very crispy, you have to follow 3 steps, first we pass the fish through the flour.
- Next we go through the beaten egg.
- Carefully go back through the frying flour, flour each fish taco well and shake to remove the excess.
- We fry the fish in small batches so that they cook well.
- We leave the fish until it is golden brown and reserve on absorbent paper to eliminate the excess oil.
- To prepare the dressing we just have to wash the tomatoes well and cut into slices.
- On top of the tomato we put the mackerel.
- Season with a drizzle of extra virgin olive oil, a pinch of salt and a touch of oregano.
