Ingredients
  • 6-8 eggs +(some white if you like)
  • 2 desalted cod fillets 250 gr.
  • 3 green peppers
  • 1 cebolla
  • 4 potatoes
  • Olive oil
  • Sal Island

Preparation
  1. To prepare the potato, cod and pepper omelette, we will start by peeling and washing the potatoes and cutting them into very thin slices. Wash the green pepper and cut it into strips. Peel and cut the onion into very small pieces.
  2. We put a frying pan with a good jet of oil and fry the potatoes, when they are removed we drain the oil and reserve. In another pan we are poaching the onion and the peppers.
  3. We dry the cod well, we remove the skin and bones if it had any, we chop it. We add it to the pan when the onion and green pepper are poached or fried, as you like. We remove it together and let it cook for a few minutes so that the flavors mix.
  4. In a bowl we put the eggs with a little salt, beat. Add the chips, stir and add the cod with the onion and peppers, mix well.
  5. We put a frying pan with a little oil over medium heat, when it is hot we add all the tortilla mixture, when the edges of the tortilla begin to be seen, we will turn it over and let it finish cooking.
  6. It will be ready when it is curdled. For it to be juicy, it is better to turn off the tortilla even a little without finishing curdling all of it. But that is to everyone's taste.
