These pancakes or pancakes are made with coconut flour. I had never tried it before, but when I saw it in the supermarket I could not resist buying it which forced me to think afterwards what could I do with it! And these pancakes seemed like a great alternative.

Pancakes are very simple to make. Maybe the first one will not be perfect but once you get the point ... everything will go smoothly. Make sure, yes, that you use a nonstick skillet for it because if not the disaster can be important. Do you dare to prepare them?

Ingredients
  • 4 eggs L
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 36 g. coconut flour
  • 1 tablespoon of cornstarch
  • 1 teaspoon of chemical yeast
  • ½ teaspoon of baking soda
  • ⅛ teaspoon of salt
  • Olive oil
  • Coconut flakes
  • Melted chocolate

Preparation
  1. In a bowl we beat the eggs, honey and vanilla.
  2. Now, we incorporate the dry ingredients: coconut flour, cornstarch, yeast and baking soda and salt; and we beat until obtaining a homogeneous mass.
  3. We let the dough rest 8 minutes. Time that we take advantage of to put the pan on the fire, over medium heat.
  4. Once hot, grease the pan with oil. I usually use a brush to spread it well so that there is no excess fat.
  5. We pour ½ saucepan of dough in the center gently, cover and cook over medium-low heat until golden brown on the bottom. Once you have done two you will learn to recognize when this moment comes by how the dough behaves.
  6. Then, we turn the tables and cook until done, about 1 minute.
  7. We repeat the last steps until we finish with the dough and as we make them, the we place one on the other so they don't get cold.
  8. We decorate with coconut flakes and hot chocolate and we serve.
