Cockles are from the family of mollusks such as clams, mussels, oysters all in the shell, they have many vitamins and minerals and contain very little fat, depending on how they are cooked they are very light and are a good appetizer, as tapas or accompanying some dish like rice, pasta ..

Ingredients
  • 1 kilo of cockles
  • 3 cloves of garlic
  • 1 glass of white wine 200 ml.
  • A handful of parsley
  • Sal Island
  • Olive oil
  • 1 lemon (optional)

Preparation
  1. To make this dish of garlic cockles, we will start by washing the cockles, we will leave them in a bowl with cold water and a handful of salt, we will leave it for half an hour to release the earth.
  2. Peel and chop the garlic very small or crush it in a mortar.
  3. We also wash and chop a handful of parsley.
  4. We put a large pan or casserole with a good jet of olive oil over medium heat, we add the minced garlic.
  5. When the garlic begins to take color, add the white wine, leave it for 2-3 minutes until the alcohol evaporates.
  6. We drain the cockles well, add them to the casserole along with the garlic and the wine. We leave it until the cockles open.
  7. Once they open, add a little salt and a handful of parsley. We stir everything well and turn off.
  8. We put in a source, drain a little lemon if you like.
  9. Ready to serve!!!
