Mediterranean Coca

Today I present you a very traditional recipe from the Northwest part of Spain, specifically from Catalonia. This recipe is very universal and has been considered a sister to the traditional Italian pizza. However, this one makes it special because of its shape and its Mediterranean ingredients.

This recipe is called coca and resembles a pizza but more elongated and triangular, where the ingredients, in most cases, are very healthy, making it a very popular dinner for weight loss diets.

Ingredients

  • Red tomatoes.
  • Green pepper.
  • Ketchup.
  • Hard-boiled egg.
  • Serrano ham.
  • bacon.
  • Grated semi-cured cheese.

For coca mass:

  • 475 g of flour.
  • 225ml of water.
  • 30 g of baker's yeast.
  • Olive oil.
  • Pinch of salt.

Preparation

First, we will do the coca mass. For this, we will heat the water a little in the microwave, it should only be warm. In a bowl, we will crumble the yeast and add half the water little by little until all the yeast dissolves. Then, we will add all the water and we will add the sifted flour little by little until we get a dough.

Said dough will be somewhat dry so we will add a little oil and salt, until we get a homogeneous dough which must ferment between half and an hour wrapped in a damp cloth.

While the dough is fermenting, we will go cutting the necessary ingredients for the coca. The peppers must first be cut into julienne strips and skip them a little in the pan together with a little olive oil. The other ingredients, we can cut them as we want.

Once the fermentation time has passed, we will stretch the dough elongated and a bit rectangular. This is the typical form of Catalan coca. At the base we will place a little tomato sauce, followed by some strips of bacon, the sautéed green pepper, an alternation of tomato slices and Serrano ham and, finally, a little chopped hard-boiled egg and a good grated Mediterranean cheese.

In conclusion, we will bake the coca in the oven, previously preheated, at 200ºC for about 15-20 minutes. Sometimes, depending on the oven, it takes less cooking, so make sure that the dough is golden brown.
