Seafood is an ingredient that as a general rule everyone likes, today I want to share with you a recipe that I call clams with hot sauce. It is simple to prepare and if you like spicy it is perfect to add a touch of cayenne.
As always, we start by buying the odd ingredient and we organize the time.

Ingredients for 4 people:
- 500g of clams
- cognac
For la salsa:
- crushed natural tomato
- pepper
- shawl
- cayenne
- oil
- 1 garlic clove
- a slice of onion
As you see the ingredients are basic and quite simple to achieve. We started an hour before putting the clams with a little water and salt to expel the grit they carry.
Now we drain them and we throw them in a frying pan with a little oil, to sauté them and that they finish opening, remember that Closed clam after a while of heat is not recommended to consume it. We add a little cognac and we sauté them, so that they have a special touch.
We let the alcohol drop we add the sauce with a spicy touch. Once we have the sauce with the clams let the tomato cook and thicken a little.
I prepare them as an aperitif, if so, the amount can vary to taste. Also remind you that it can be without cayenne, so It would stop being so spicy.
