Lemon muffins

A weekend is not such if we do not bake some cake at home or cupcake for breakfast. These are simple and are made without complications, unlike other more complex pastry products or pastries, they are very grateful!

The aroma of freshly baked muffins is a foretaste of the feast that happens to be eaten. Are you from lemon, citrus flavored, they require a time of rest in the refrigerator; necessary along with a high temperature in the oven so that they acquire a fluffy texture and grow. Ingredients

  • 3 large eggs
  • 250 g. of sugar
  • 225 ml. sunflower oil
  • Lemon zest
  • 2 drops of lemon essence
  • 250 ml. milk
  • 375 g. pastry flour
  • Pinch of salt
  • 4 pairs of raising agents (bicarbonate and acidulant)
  • Sprinkle sugar

Crafting

We mount the eggs together with the sugar using electric rods. Once they double in volume, add the oil in the form of a thread, from the edge of the container, and continue beating.

We add the lemon zest, the essence and the milk, and continue beating at minimum speed.

In a bowl we sift the flour along with salt and raising agents. Add them little by little to the wet mixture, stirring with a wooden spoon until all the ingredients are integrated.

We carry the dough to the fridge in a covered container for at least 3 hours or overnight.

After time, we preheat the oven to 220º degrees while we pour the dough into the paper molds, which are in turn contained in rigid steel molds. We fill three-quarters of its capacity.

Sprinkle the surface with sugar and we put in the oven. After 5 minutes of baking, lower the temperature to 200º and cook for 10-15 more minutes, until they look golden.

Let cool before serving.
