Cinnamon Chocolate Chip Scones

Scones with cinnamon and chocolate

I discovered scones when I started to make my first steps in the world of pastry and since then I have not stopped preparing them. These Scottish bread rollsCommon in UK breakfasts and snacks, they are usually served warm and half open.

Made with wheat, rye or oat flour, butter and yeast, as basic ingredients, the scones admit numerous variations. Those of cinnamon and chocolate chips they are one of my favorites; freshly made they are delightful. Essential at home with American cookies.

Ingredients

20-25 units

  • 390 g. pastry flour
  • 70 g. sugar
  • 7 g. baking powder
  • 3 g. cinnamon powder
  • 200 g. cold butter
  • 180 g. cream 30% mg
  • 1 egg (50 g.)
  • 1 teaspoon vanilla essence
  • 110 g. Chocolate chips

For the cover:

  • 50 g. of sugar
  • 1 teaspoon of cinnamon powder
  • 1 teaspoon of cream

Crafting

In a large bowl, we mix with a fork flour, sugar, cinnamon, and baking powder. We incorporate the cold butter into pieces and with the stirrup or the same fork, we work it until we achieve a mixture with small lumps.

Next we add the Chocolate chips and mix lightly.

In another bowl, beat the cream with the egg and vanilla with a fork. Next, we add the flour mixture to the mixture. Mix with a wooden spoon until it is all integrated. It will give you the impression that it needs more liquid, but it will not be necessary.

We place the dough on a plastic and with our hands we give it a rectangular or circular shape. We place another plastic on top and, with the roller, we finish flattening the dough until we achieve a thickness 1,5 cm. approx.

We introduce the dough to the fridge for 20 minutes. Meanwhile, we prepare the topping, mixing all the ingredients: sugar, cinnamon powder and cream.

We take the dough out of the refrigerator and we cut in circles with a cookie cutter. We place the cookies on the baking tray (on parchment paper and separate if it enters) and we cover them lightly with a little of the mixture from the cover, pressing gently with the fingers.

We take to oven at 180ºC for 20-25 minutes, until lightly browned.

We take out and we place on a rack until cool.
