In my house, we usually cook stewed potatoes either with choco or with veal, but this time we wanted to innovate a bit and make a classic dish in many other places in Spain: stewed potatoes with chorizo. On this occasion, we choose an Iberian chorizo that is quite intense in flavor, but you can choose the one you like the most.

Stewed potatoes with chorizo
These potatoes stewed with chorizo are perfect especially for cold days like the ones we have been spending lately. Great for gaining strength and energy.

Ingredients
- 4 large potatoes
- 1 sausage
- 1 cebolla
- 4 cloves of garlic
- ½ green pepper
- Water
- Olive oil
- Sal Island
- 1 teaspoon of paprika
- 1 hoja de laurel
- Chopped parsley to taste
Preparation
- In a big potWith a small splash of olive oil we will add the chopped onion, the half pepper in two pieces and the garlic cloves. The garlic cloves, we have cut them in half each. We leave over medium heat to poach everything. Once poached we add the bay leaf.
- El sausageMeanwhile, we cut it into slices and peel and cut the potatoes. We add all this together with salt, chopped parsley and paprika. Sauté everything for about 5 minutes and then add the water. We leave over medium-high heat and we are stirring and testing every so often. Set aside when the potatoes are tender.
