Ingredients
For the cookies
  • 130 g. butter at room temperature
  • 150 g. brown sugar
  • 50 g. white sugar
  • 1 egg
  • 1 teaspoon of vanilla essence or vanilla sugar
  • 100 g. oat flakes
  • 60 g. pastry flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ half teaspoon of salt
For the filling
  • 150 g. 70% cocoa chocolate
  • 150 ml. liquid cream

Preparation
  1. We preheat the oven to 180º and line the baking tray with parchment paper.
  2. We beat the butter with the sugar and the egg.
  3. Add the vanilla essence and continue beating.
  4. We add the flakes of crushed oats, flour, bicarbonate, baking powder and salt and mix until all the ingredients are incorporated.
  5. We form with a few teaspoons balls with the dough and we place them, as we make them, on the trays. We crush them slightly, keeping in mind that there must be a gap of about 4 cm between them so that they do not stick.
  6. Once we have a tray ready, we put it in the fridge for 10 minutes.
  7. We take out and we bake 10 minutes until they look slightly golden.
  8. We let them temper to handle them and place them on a rack to cool completely.
  9. For make the filling Bring the cream to a boil. Then we remove from the heat and add the chocolate into pieces. Mix until the chocolate melts and let it temper.
  10. We pour the cream into a bowl, cover it with film and Let it cold down some hours. If it's very hot you can put it in the fridge for a while. If it is too hard and you cannot handle it to fill the cookies, it will be enough for you to let it cool down or give it a microwave blow (a few seconds).
