Chocolate cookies, an irresistible snack

Chocolate cookies

I really like baking cookies, especially if chocolate is one of your ingredients. This recipe was passed to me by a friend and although it is laborious, the result is worth it. The cookies have a mild chocolate flavor and an irresistible crunchy texture.

They are very lucid cookies, ideal for a children's party if you use star or animal molds. Now, they take time because the recipe is demanding in terms of refrigeration times between steps. Simple but "slow", not as comfortable as the recipe for cracked cookies which is equally showy.

Ingredients

For 50 cookies

  • 200g. normal sugar
  • 115g. brown sugar
  • 228g. butter at room temperature
  • 3 eggs
  • 1 teaspoon vanilla essence
  • 380g. Of flour
  • 60g. cocoa
  • 1 / 2 teaspoon salt

Crafting

In a bowl we beat the butter and the sugar with the help of electric rods until a homogeneous mass is achieved.

We add below the eggs, one by one, beating until each one is incorporated before adding the next.

Next we add the vanilla extract and we mix.

In another bowl we mix the sifted flour, cocoa powder and salt. We add these dry ingredients to the wet ones little by little and mix with a wooden spoon or spatula until just combined. We will obtain a sticky and light dough as a result.

Cut two pieces of cling film and place one half of the dough on each one. With the same plastic we give the dough the shape of a disk and wrapped in film the we put in the fridge at least 2 hours.

We take the dough out of the fridge, and with a floured rolling pin we spread it on baking paper until we achieve 0,6 cm. thick. We transfer the paper and the iron to a plate and place it in the freezer for 10 minutes.

Then we cut the cookies We place them on a baking tray lined with paper and put them in the freezer for another 10 minutes.

We take advantage of this time to preheat the oven at 180º. Finally, we bake the cookies between 13 and 16 minutes, depending on their size.

Let cool on a rack and store in an airtight can. They are kept for several days.

Notes

Since the cookies are dark in color and it is difficult to tell when they are done, I recommend doing a small test batch.

It is important cool the dough continuously. We will thus avoid that, being very sugary, the cookies are scattered in the oven at the time of baking.
