Chocolate Nut Muffins

As you know it is the last day of school, so, for me, my holidays have already started !! And besides, it's Friday! Therefore, today I have brought you these mini-muffins with chocolate and nuts to celebrate a little that Easter is coming and we can rest a bit, although I will not leave you lying around, I will continue to publish recipes.

All the muffin It is a very practical food for when we crave something sweet and, even more, if it has chocolate and nuts. It is a very good option for children's snack or for unexpected visits for the afternoon coffee.

Ingredients

  • 110 g of all-purpose flour.
  • 120 g of sugar.
  • 1 tablespoon Royal yeast.
  • 7 tablespoons of sunflower oil.
  • 2 eggs.
  • 20 g of chopped walnuts.
  • 1 tablespoon of powdered chocolate.
  • 50 ml of milk.
  • Strawberry jam and icing sugar to decorate.

Preparation

To make this recipe for chocolate and nut muffins, the essential thing we have to do is the muffin batter. To do this, we will first sift both the flour, the yeast and the cocoa and we will reserve it all together for later.

Then we will separate the whites from the egg yolks. We will place the whites in a bowl and beat them by hand or with the electric rods at the point of snow and we will also leave them reserved.

On the other hand, we will put the two egg yolks in another bowl and we will also mount them by hand or with the electric rods until they double in size. When this happens, we will add the sugar, then the oil and, finally, the milk and beat a little more.

Afterwards, if possible with a tongue (rubber spatula) we will mix the mixture of the yolks with the whites mounted. We will stir with enveloping movements so that the mixture does not drop too much. And then we will add to this the flour, yeast and cocoa that we had sifted before.

Chocolate Nut Muffin Dough

Finally, once you add the mass of these chocolate and walnut muffins, we will distribute them in the typical muffin molds that you will find in any bazaar. You have to fill it more or less by half otherwise you will run the risk of spilling everything. We will put a little chopped walnuts on top and we will take it to the oven some 20-25 min at 180 ° C. We will decorate them with icing sugar and a small stick of strawberry jam.
