Today we are going to try another simple way to cook some steaks in a delicious sauce. This dish is called wrapped children, and we will prepare them exactly as my grandmother did when I was little. Needless to say, this name didn't sound good to me. What was that to eat children? It's actually a stuffed meat roll, I guess its name comes from the fact that it looked like babies when they were girdled or almost mummified in other times. Although they now say that this way of wrapping children had its wisdom.
Preparation time: 35 minutes.
Ingredients
- Beef steaks (2 per person)
- slices of ham serrano
- melted cheese slices
- asparagus
- olives
- shallots
- raisins
- Meat extract
- 1 glass of red wine
- 1 teaspoon cornmeal
- butter and oil
- round chopsticks
Preparation
We put a steak on a plate and spread a slice of ham on top, and at the widest end we place the cheese, two olives and an asparagus. We roll starting from the end where the ingredients are and secure the roll with a toothpick.
We have already assembled all the rolls so we put butter and oil to heat in a cocotte.
When the oil and butter mixture is hot, we arrange the rolls on the bottom and brown them on both sides. Then we add the wine and the onions to the pot and keep it over low heat until the shallots are tender.
At that point we add the raisins, olives and a teaspoon of cornmeal and another of meat extract. We leave a little more on the fire until the sauce takes consistency. You may have noticed that we do not use salt, because the Serrano ham and olives will give just the right touch of salt.
Today we will accompany the children wrapped with brown rice.
