Chickpea hummus

Humus is a chickpea paste o mash garnished with lemon juice, tahini sauce or cream, and olive oil. This dish is very traditional in Arabic cuisine and it is also hitting hard in our Spanish kitchens. Tahina is a paste made with sesame seeds that, together with the spices, gives it that characteristic touch of flavor.

This chickpea hummus can be ideal for all kinds of side dishes or also as a main dish as a puree or pasta for toasts. Chickpea is one of the carbohydrates that provides the body with the most energy, and is also highly recommended for diabetics.

Ingredients

  • 200 g of dried or cooked chickpeas.
  • 1 clove garlic.
  • 1/3 of a teaspoon of salt.
  • 1/2 teaspoon of cumin.
  • Juice of half a lemon.
  • Pinch of sweet paprika.
  • Parsley.
  • Olive oil.
  • 1/2 glass of water
  • 2 large tablespoons of tahini.

Preparation

Firstly, we will cook the chickpeas in water in a pressure cooker for about 25 minutes. Before closing the pot we will have to defoam them. If you opt for already cooked chickpeas, you will save this step.

Afterwards, we will drain the chickpeas and we will crush with a fork. If you have a processor, machine or mixer, you can also grind them there.

Then, we will add to this puree, the garlic clove, the cumin, the salt, the lemon juice and the tahini sauce. We beat again until everything is well integrated.

Then let's go adding water little by little the water until you get a paste, like a kind of Mexican guacamole.

Finally, we will transfer this hummus to a plate and We will decorate with the chopped parsley and a little sweet paprika. In addition, you can add some reserved chickpeas.
