There are many variations in making a good croquettes recipe, in fact, I have already made them for you with chicken and chicken, ham and béchamel. However, today I have prepared a recipe for chickpea croquettes with the cooked chickpeas that I had left over from the day before.

Ingredients

  • 200 g of chickpeas.
  • 1 egg yolk.
  • 1 whole egg.
  • Flour.
  • Bread crumbs.
  • Salt

Preparation

First, we will do the croquettes dough. To do this, we will take the already cooked chickpeas that we have left over and, we will crush them with a fork until obtaining a kind of puree. To make it quicker and easier for you to pass them through a purée.

Then, we will add to the puree a egg yolk and a little salt. We will stir well until we get a homogeneous dough.

Then, we will form small balls or portions with that dough and we will pass them through flour, egg and breadcrumbs, making sure that they compact well, so that later they do not burst.
